Under Settings/System Settings you can list the tax name and how much the tax is – this would be the “universal” or “general” amount. It is then automatically generated and totaled on the invoices.

System Settings: Tax

In the Job Tasks, you can also tick on and off if you want the task to be taxable or not (in case you have a mix of taxed items and non-taxable items).
Job Tasks: Taxable

Also, on the Job Details, you can override the general/universal Tax rate above and list something different for that particular job.
